Rind of one watermelon prepared as detailed below syrup
8 C sugar
4 C vinegar
16 sticks cinnamon
8 tsps whole cloves
little mustard seed
Peel watermelon rind, removing all green and pink portions. Cut into one inch cubes and soak overnight in salt water (4 Tbs. salt to 1 quart water) Drain, cover with fresh water and cook until almost tender. Drain the watermelon.
Tie the spices in a cheesecloth bag and make the syrup using sugar, vinegar and spices. Heat syrup and spices to boiling and allow to set for 15 minutes. Add the drained watermelon rind and cook until clear and transparent. Pack boiling hot into sterilized jars and seal at once.
