Spanish Rice

  • 2 lbs. bacon or 1 lb. roasted sausage
  • 1/2 large green pepper, chopped
  • 2 medium onions, chopped
  • 1 1/4 C rice cooked as directed on package
  • salt and pepper to taste
  • 6-8 medium tomatoes peeled and cut into thin wedges
  • 1 C water

Cut bacon in 1 inch pieces or slice sausage thin. Place in large skillet and cook until nearly done. Drain well. Add green pepper and onion. Cook, covered, over low heat until transparent. Add rice, salt, pepper, water and tomatoes. Cook until tomatoes are done and the rice has absorbed the juices.
One large can of stewed tomatoes may be used in place of the fresh tomatoes
