Spaghetti Squash

Wash skin and cut in half lengthwise. Remove seed and place cut side down in 2 inches of water, cover and boil for 20-30 minutes

OR place halved squash face-up in 1/4 cup water, cover and microwave on high for 7-10 minutes or ’til tender.

Loosen squash strands with fork, place in bowl and top with butter and salt – Parmesan cheese – bacon bits – butter and chopped herbs – or your favorite spaghetti sauce – Very good with small amount of butter, Parmesan cheese, and Tony Chachere’s Creole seasoning. Be inventive.
