Carrot Cake

  • 3 eggs, beaten
  • 2 c sugar
  • 1 c Crisco oil
  • 2 c flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 c crushed pineapple
  • 1 c chopped walnuts
  • 2 c grated raw carrots

Mix eggs, sugar, and oil. Sift dry ingredients and add to egg mixture. Beat well. Add last three ingredients and mix well. Bake in greased and floured tube pan 1 1/2 hours at 350 degrees. Cool before removing from pan.

I’ve made this in a bundt pan, works pretty much the same as the tube pan. Loaf pans are great too. Cupcakes are really good too, watch your time, check for doneness.
