Buckeyes

1 1/2 C of 10X powdered sugar
1 1/4 C peanut butter (creamy or crunchy)
3/4 C butter
1 t vanilla
6 oz. or larger pkg. semi-sweet chocolate chips

Mix first 4 ingredients; powdered sugar, peanut butter, butter and vanilla. Mix well. Form into balls about teaspoon size.
Chill for a few hours

NOTE: do not melt chocolate until you’re ready to coat the buckeyes.
Melt chocolate chips in pan over a pan of boiling water (double boiler).
Dip buckeyes in melted chocolate leaving a small spot uncovered by the chocolate. (We use toothpicks so we don’t lose them in the chocolate) Rechill and serve.
